A classy burger for a classy man!

Here's the recipe for the "BUBLE BURGER" as shown and created by chef Michael Bonacini yesterday on Canadian talk show City Line in Toronto.


2 - 4 oz. pieces of Coho salmon

1/4 cup teriyaki sauce (store bought)

4 slices breakfast bacon

1/2 tsp. wasabi mustard

4 tbsp. mayonnaise

2 hamburger buns

1/2 shredded lettuce (iceberg)

2 slices ripe tomato

1/2 avocado


1.Lightly brush the salmon with the teriyaki sauce.

2.In a nonstick pan, fry the bacon till golden brown and crisp. Remove and keep warm.

3.In the same non-stick pan, gently pan fry the Coho salmon over medium high heat for 3-4 minutes on each side until the colour becomes rich and mahogany-like.

4.Whilst the salmon is cooking, lightly toast the hamburger buns. Mix the wasabi with the mayonnaise and spread a little on each side of the toasted buns.

5.Place a good amount of shredded lettuce on the bottom of each hamburger bun, followed by a slice of tomato.

6.Once the salmon has cooked, place on top of the sliced tomato. Place two slices of avocado and the crispy bacon on top of the salmon.

7.Close the hamburger bun, skewer and cut in half. Serve along side a fresh salad or vegetable chips.
